I have a love/hate relationship with Christmas cookies. Sometime’s they work for me, sometime’s they don’t. Sometime’s I can roll them out evenly, sometimes they look like the old Route 17 thruway in western NY with different levels of pavement.
So, when I saw this yummy looking Peppermint Brownie Cookie Recipe posted by the New York Times on Threads the other day, I decided to give this one a try. No rolling out dough, no cookie cutters needed, but still festive with the peppermint.

I’ll only say their version of a 1/4-cup scoop, must be a LOT smaller than my 1/4-cup scoop because mine were HUGE and I only got 8 1/2 cookies out of it, not 12. And pounding the cookie sheet on the counter resulted in at least one cookie completely breaking and flying across the counter.
That being said, they ARE yummy, chewy, and pepperminty. Would I make them again? Yes. Would I do it differently? Yes. Will I make them again this holiday season? Not sure. I made a HUGE mess in the kitchen with the chocolate & peppermint chopping. But I’m sure that’s just me and my cookie experiences.
