Bistro Blueberry Bread

Summer is finally here! The longest and warmest days of the year have arrived.

The flavors of summer are in full swing as well and I decided to try a new recipe for Lemon Blueberry Quick Bread.

Tea and Lemon Blueberry Bread on the deck

The bright lemon flavor always pairs well with blueberries. Despite my berries sinking to the bottom third of the loaf pan, the taste was lovely! It’s more cake-like than bread, and the addition of a half cup of walnuts provided a nice crunch.

A Rooibos tea from Bewley’s in Ireland complimented the sweetness of the bread with a warm earthy brew and subtle nutty undertones.

There were still some peonies blooming in the garden and two new blue and white linen napkins embroidered with sunny sunflowers from April Cornell rounded out the scene.

Since summer in Maine is short, we must make the most of it while it lasts.

Cheers!
